Zucchini Tots

This was a big hit with my husband. The kids didn't LOVE them, but they didn't hate them either. I'm thinking that if I serve these regularly they may quickly become a favorite for everyone!

I also know there are a lot of recipes out there for these little goodies! They're pretty popular and you can probable add pretty much any seasoning you like.

21 Day Fix Approved Zucchini Tots

Ingredients:
  • cooking spray
  • 1 packed cup grated zucchini
  • 2 egg whites 
  • 2 Tbsp onion finely grated 
  • 1/4 cup shredded sharp cheddar cheese
  • 1/4 cup Panko breadcrumbs
  • 1/4 tsp kosher salt
  • 1/4 tsp Mrs Dash Onion & Herb Salt Free Seasoning

Directions:

Preheat oven to 400°F.  Spray a baking sheet with cooking spray.

Grate zucchini onto a clean dish towel until you have 1 packed cup.  Sprinkle a small amount of salt onto grated zucchini and wring all of the excess water out of the zucchini. The salt will actually help pull some of the water out.  I then let my shredded zucchini sit out on the cutting board for about an hour or so to help it dry out a little bit more.

Shredded and Ready!


 In a medium bowl, combine all of the ingredients and seasonings.

Spoon 1 tablespoon of mixture and form into oval shapes on the spoon. Place on the cookie sheet and bake for 16 to 18 minutes, turning halfway though cooking until golden.
 
So now you're probably wondering what the container equivalent of these are.. great question :) If you were to eat your entire batch (I got 18 out of my recipe), which would not be hard to do because they are tasty, it would be:

  • 1 green (zucchini and onion)
  • 1 blue (shredded cheddar cheese)
  • 1/2 yellow (Panko Bread Crumbs)
  • 1 red (2 egg whites)
