Clean Eating Carnitas Bowls

Ok- we all know that eating "clean" can be a struggle sometimes and can get boring. But only if you let it. I made this recipe just the other night because I had a pork shoulder in my freezer and it needed to be cooked.

Now normally I really wouldn't recommend pork shoulder because it is pretty fatty. You could try this with a pork loin but I'm not 100% convinced it would turn out as tasty. Not too mention the fact that one meal made with pork shoulder isn't going to make you gain 5 lbs! So this recipe is kind of cheat but really not all that bad.

It should also be noted that with these measurements this came out very peppery.  My husband and I liked it but there was no way the kids were going to eat this. So I would add less pepper next time OR I would eliminate it all together and you could spice up your own individual serving if you like it HOT!

This is also a slow cooker recipe so HELLO! That's a win in and of itself, am I right?



What you need:
2- 3 lbs of pork shoulder
2 teaspoons of ground black pepper (if you dont like spicy, use less or eliminate this all together)
2 teaspoons of garlic powder
2 teaspoons of onion powder
1 teaspoon of salt
1/2 teaspoon of oregano
1/2 teaspoon of dried cilantro
1/4 teaspoon of cumin
1/4 cup of beef broth

Method:
Trim as much fat from the pork shoulder as you can.
Place pork shoulder in crock pot on low
Mix all dry ingredients in a small bowl
Pour broth in crockpot (just enough to cover the bottom of the pot. For me it was about 1/4 of a cup)
Sprinkle dry ingredients over pork shoulder and in beef broth.
Cook on low until meat falls apart about 4-6 hours.

Now this is where it gets really good! I made some brown rice to put the meat on and topped it with pico de gallo, shredded cheddar cheese, greek yogurt and a few slices of avocado.

21 Day Fix Container conversions:
1 Red (meat), 1 yellow (brown rice) 1/2 blue (cheese) 1/2 blue (avocado), 1/2 purple (pico de gallo) 1/4 red (greek yogurt).

Of course you can add as much or as little of the toppings as you like for your containers. I had already used my orange container for the day but if I hadn't there would have been olives ALL over that bad boy! You can also sub whole wheat tortillas for your rice if you prefer to have a more traditional canitas meal!
