Pasta with Chicken and Tomatoes

Anyone who knows me knows I am not a great big fan of pasta. I'll eat it. But it's not a favorite. However, this dish is a favorite and we've actually been eating it in our house for a long time. It's super easy and we usually always have these ingredients on hand. Since starting 21 Day Fix, we've also fallen in LOVE with Mrs. Dash. Especially the tomato, basil and garlic seasoning mix. If you haven't tried it yet, I highly recommend it. But be warned it's very garlicky so a little goes a LONG way.


  • 1/4 box of whole wheat pasta
  • 4 Roma Tomatoes (in a pinch you can also substitute canned diced tomatoes)
  • 1/2 boneless skinless chicken breast 
  • freshly grated Parmesan cheese (sprinkle to taste)
  • 2 Tbs. Extra Virgin Olive Oil
  • Parsley
  • Mrs. Dash Tomato, Basil and Garlic Salt Free Seasoning mix (optional)



  • Grill chicken breast and shred
  • Prepare pasta according to directions on box and drain
  • Dice Roma tomatoes

In a large bowl assemble your ingredients. Pasta, grilled shredded chicken, Roma tomatoes, top with Parmesan cheese and parsley and Mrs Dash Seasoning. Drizzle EVOO over top, then toss! It's that simple.

Another plus to this dish is that since we plan and prep we usually have these foods on hand. We typically grill chicken so we have enough on hand for 2-3 days. Pre-cook spaghetti squash and whole wheat pasta so we can just warm it up and always have tomatoes handy. It's real easy to just throw this together for lunch the next day or a dinner on the fly!

We also have a variation on this dish that substitutes spaghetti squash for the pasta. It's just as delicious and increases your veggie intake. I prefer the spaghetti squash version myself but will eat either!
