Peanut Butter Cups (Shakeology style!)

I've been seeing the recipe for these bad boys all around the internet since I started "Googling" different Shakeology recipes. Some seem a little time consuming and required quite a few ingredients.  Then I came across this recipe on a variety of Pinterest boards and it seemed simple so I thought I'd give it a try.

I decided to make these 2 different ways because I had all of the ingredients in the house and was curious as to which one might taste better. Besides the first one that I saw on Pinterest called for PB2. Which I love but I like to save mine for when I only have water to mix with my Shakeology when I'm on the go.

The first recipe called for:

2 tsp Unrefined Coconut oil (melted)

2 Tbsp PB2

2 tsp Chocolate Shakeology

2 Tbsp water

Tin foil cupcake liners

This will make 1 peanut butter cup.

Method:

Mix coconut oil and PB2 together in a small bowl and set aside

PB2 and coconut oil

Mix chocolate Shakeology and water together in a small bowl until it resembles the consistency of chocolate pudding

In your cupcake liner, layer chocolate then some peanut butter then top it off with the rest of your chocolate. Place in the freezer. Should be frozen in about 1/2 hour.

Peanut Butter cup with Coconut oil and PB2

I didn't have tin foil cupcake liners so I just used regular ones that I lightly coated with a little but of coconut oil. The peanut butter cup came out of the liner without any problems.  

Since I thought it was kind of silly to use all of my PB2 for this recipe I decided to try and use 2 tsp of almond butter. I simply doubled the chocolate portions and used about 2 tsp per peanut butter cup. This made 2 peanut butter cups and saved my PB2!

They both tasted pretty good and if you're familiar with chocolate Shakeology then you know how rich the chocolate is! They definitely hit the spot if you're craving a sweet.

As far as 21 Day Fix and what container, most treats using Shakeology count as a yellow. So I would count it as a yellow and 2 tsp. just to be on the safe side!
