Stuffed Bell Peppers

I must admit that I did find a variation of this recipe on the internet, so there are similar ones out there, which is awesome!

This recipe is pretty simple and straightforward to make. What I also like about it is that you can prepare the stuffing ahead of time and either freeze or just keep on hand and put them together as you want or you can always just have the stuffing and have a side veggie to add another vegetable.

Ingredients

  • 1 lb ground turkey
  • 8 bell peppers (I used green because that's what I had on hand)
  • 8 Roma tomatoes diced
  • 2 tsp minced garlic
  • 1/2 cup diced onions
  • 2 cups brown rice or quinoa
  • 1/2 cup shredded cheese (we used cheddar but mozzarella would be yummy too!)
  • 2 Tbsp Italian Seasoning or Mrs. Dash Onion & Herb (you can really play around with this and add your seasonings of choice. Taco, etc)
  • pinch of sea salt



  • Prepare rice as per directions on box
  • Saute onions, garlic add ground turkey and diced tomatoes (canned seasoned tomatoes always work in a pinch and add another layer of flavor!)
  • Remove from heat and stir in cheese and add seasonings


Prepare peppers
  • Boil a large pot of water with a pinch of salt
  • Cut off tops and remove "insides"
  • Place peppers in boiling water for about 5 minutes
  • Remove from water and sprinkle a touch of sea salt into the insides of the peppers



  • Fill each pepper with your rice/meat mixture 
  • Top with just a touch of cheese
  • Bake at 350 degrees for 30-35 minutes or until cheese bubbles


1 lb of  ground turkey makes enough to fill about 8 peppers, so feel free to cut this recipe in half or just do what we did, which is make it all and store in the refrigerator so you have a quick healthy meal on hand!
