Clean Pumpkin Bread

I made this pumpkin bread for the first time today and the kids LOVED it! It wasn't as sweet as what we are all used to because honey is used instead of sugar but it had great taste and I will definitely be making it again! It smelled great baking and the bananas and applesauce make it moist.





Heat oven to 375 degrees

2 cups oats (put in food processor and process into a flour consistency). I left mine a little "chunky" and it wasn't bad at all!
3/4 cup of pumpkin puree
1 large banana mashed
4 oz unsweetened applesauce
1/2 cup of raw honey
1 1/2 tsp baking powder
1 tsp cinnamon
1 tsp vanilla extract
2 eggs

Combine all ingredients in a bowl and stir until well mixed. Place batter in well greased loaf pan. to keep it clean you will want to use olive oil and make sure you coat it well. Otherwise bread will stick.

Bake for 40 minutes or until toothpick comes out clean! I sprinkled some oatmeal on top for some extra flair!
