21 Day Fix

Cauliflower Pizza Crust

I know there are a TON of recipes for this all over Pinterest and other blogs. But I did do my own variation on this recipe that I haven't seen yet so mine's just a tad different and I hope if you try it, you enjoy it!

Low calorie, low carb and gluten FREE and loaded with flavor! It doesn't get much better than this. We topped our pizza with pizza sauce, mozzarella and parmesean cheese and turkey pepperoni.

Ingredients

1 Large head of cauliflower
1/4 cup of egg whites or 1 large egg
1/2 cup grated mozzarella cheese
1 tsp of Mrs Dash Tomato Basil salt free seasoning
1/8 tsp salt
1/4 tsp pepper

  • Preheat oven to 375 degrees
  • Line cookie sheet with parchment paper
  • Rinse and separate cauliflower
  • Place in food processor or blender until the cauliflower resembles a "rice" texture
  • Put "riced" cauliflower on a baking sheet and bake in the oven for 15-20 minutes
  • Remove from oven and place in a tea towel or cheesecloth doubled
pre squeezed cauliflower on the tea towel

  • Gather tea towel or cheesecloth and make a ball of cauliflower and begin to squeeze out all of the liquid. This is going to take a little bit of time. You want to get most if not all of the water out of the cauliflower so your crust is not soft.
squeezed and ready for egg, cheese and seasonings!

  • Turn oven up to 450 degrees
  • Place cauliflower into a bowl and add remaining ingredients (cheese, egg, Mrs Dash, salt and pepper)
  • Place mixed cauliflower on your parchment papered cookie sheet and press out "dough"
Ready for the oven!

  • Bake 15- 20 minutes
  • Remove from oven
  • Put toppings on and pop back in the oven
  • Bake again until cheese is nice and bubbly!
TA DA!
