Buffalo Cauliflower Bites


Super Bowl Sunday in this house is always fun. Good food, family and lots of fun! This year I revamped my Super Bowl menu to include all healthy dishes. We started off with a vegetable and fruit and cheese and tray and included ranch, greek yogurt and roasted red pepper hummus for dipping.

We also made some Buffalo Cauliflower Bites for the first time. I'm always nervous trying new recipes for the first time when company comes over. But I figured what the heck? There's plenty of other options if these are flop, so I gave it a whirl.

And I must say these DID NOT disappoint! I'm thinking that from now on when I'm craving wings, I'll just whip up a batch of these. They were super easy and pretty quick. I just have to make sure I always have some wing sauce in the house. The original recipe called for gluten free flour and vegetable oil but I substituted whole wheat flour and olive oil.  I also didn't have garlic powder so I used minced garlic.

Cauliflower Buffalo Bites


Ingredients


1 head cauliflower
tablespoons olive oil
teaspoon salt
3/4 teaspoon minced garlic
Generous grinds of black pepper
cup all-purpose whole wheat flour
cup buffalo sauce 

Instructions

  1. Preheat oven to 450° F. Cut cauliflower into bite-sized florets. Toss in a bowl with oil, salt, pepper, and garlic powder. Put the flour in a plastic bag with the cauliflower and shake until the cauliflower is well-coated with the flour.
  2. Prepare a greased baking sheet or a baking sheet lined with parchment and place the flour-covered cauliflower on the sheet. Bake for 18 minutes.
  3. In the same bowl you used to toss the cauliflower and oil, gently toss the cauliflower together with the hot sauce. When the cauliflower is nicely coated with the sauce, gently place the cauliflower bites back on the pan and pop them into the oven for another 5-8 minutes.
  4. Serve with celery and your favorite ranch dressing or greek yogurt.
