We had ours over pasta but you could also make this and put it into 1/2 of a whole wheat pita.
- 1 package of chicken sausage (smoked)
- 1 green bell pepper
- 1 onion
- 1 can of reduced sodium diced tomatoes with Italian seasoning
- 1/2 box of whole wheat penne pasta (or whole wheat pita, halved)
- Prepare pasta as per directions on box.
- Slice chicken sausage into medallions.
- Saute onions and green peppers. Once onions are translucent add tomatoes and sausage.
- Cover and cook until mixture is bubbling.
- Serve over pasta.
This is a quick, simple recipe that takes minutes to make.
