I often find it a big challenge to eat healthier in the fall and winter months as I'm sure most people do. It's chilly outside and who wouldn't love to curl up to a nice warm meal that includes cheese and carbohydrates?
So in my attempt "winterize" my new eating habits, I tried oven roasting some cauliflower tonight. I'm not even quite sure why I haven't tried this earlier. It was warm, full of flavor and even kind of tasted like fall!
Ingredients
- 1 Head of cauliflower
- 1/4 C EVOO
- 1 Tbs minced garlic
- 2 Tbs lemon juice
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp Mrs Dash Table Seasoning
- 2 Tbs grated Parmesan cheese
- Parsley for garnish
Directions
Preheat oven to 500 degrees
Cut cauliflower into florets approximately 1 1/2" pieces
Drizzle EVOO over cauliflower
Season with garlic, lemon juice, salt, pepper and Mrs Dash
Place roasting pan in the oven and cook for approximately 15-18 minutes, stirring frequently
Once done, sprinkle with cheese and garnish with parsley
Serve while warm
